Pay close attention to where Link is in relation to the Deku Baba. Link's right side should be aligned with the Baba as shown while you're blocking and letting him knock you back. Once he's knocked you back and stops paying attention to you, neutral roll forward, then hold left and mash A. You'll get it every time.
